Huevos Rancheros

 Ingredients:
Nonstick spray
2 tablespoons canola oil, divided
1 cup chopped onion
2 garlic cloves, minced
1 jalapeno pepper, minced
1 green bell pepper, diced
1 14.5-ounce can diced tomatoes
2 teaspoons red wine vinegar
1 15-ounce can red kidney beans, drained and rinsed
1/2 teaspoon ground cumin
4 large eggs
1/4 teaspoon salt
4 corn tortillas
1/2 cup low-fat shredded cheddar cheese

 Directions:
Preheat the broiler. Coat a baking sheet with nonstick spray.
Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat; add the onion, garlic, jalapeno, and bell pepper; cook 5 minutes. Add the tomatoes, vinegar, beans, and cumin; cook, stirring occasionally, 5 to 6 minutes.
In a nonstick skillet, scramble the eggs with 1 tablespoon of water and the salt.
Place the tortillas on the baking sheet, brush both sides with remaining oil, and place under the broiler until lightly browned. Remove from oven and flip. Top with the tomato mixture and eggs; sprinkle with the cheese.
Place under the broiler until cheese melts; serve immediately.

Egg-White Muffin Melt

 Ingredients:
3 egg whites
Whole-grain English muffin
1/2 cup spinach
1 slice reduced-fat cheddar cheese
1 slice tomato

Directions:
Scramble 3 egg whites. Cover half of a whole-grain English muffin with 1/2 cup spinach and the other half with 1 slice reduced-fat cheddar cheese; toast until cheese is melted. Add egg and 1 slice tomato.

Mexican Egg Scramble

 Ingredients:
3 egg whites
1/4 cup canned black beans
1 ounce reduced-fat cheddar cheese
2 tablespoons salsa

Directions:
Scramble 3 egg whites with 1/4 cup canned black beans (rinsed and drained) and 1 ounce reduced-fat cheddar cheese. Top with 2 tablespoons salsa, or to taste.

Eggs Ole

 Ingredients:
2 large eggs
2teaspoons salsa
1 Tablespoon guacamole

Directions:
Crack the eggs into a preheated, nonstick skillet over high heat, breaking the yolks. Cook on one side for 50 seconds, or until fully cooked. Top with remaining ingredients. Enjoy with one handful of baked tortilla chips.

I Am. I Can. I Will.

Well. . . I started this blog earlier on in the year and I honestly didn't get anywhere. At that time I was 148 lbs. I am currently 153 lbs. But this time, I have a little more determination. I have a vacation coming up at the end of March and graduation at the end of June. I want to be in better shape, not only that but I want to feel better about myself. I know what it feels like to have low self-esteem and have no confidence in your self. I want to help change that for myself and hopefully for others. I'll post motivational quotes, pictures, everything that I can think of that has to do with fitness. I'm getting back into working out every day now that I have a break off of school. I will be doing HIIT (High Intensity Interval Training) for about 45 minutes. I can't afford a gym membership or any equipment for my home. I have my body, and 1 ten pound weight so far lol I'm broke right now so I don't really have many options. Just remember, 'I Am worth it, I Can do whatever I set my mind to, I Will achieve every goal I set for myself.'
